Ingredients

Units Scale

Chicken

  • 1 pound chicken tenderloins or breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons poultry seasoning
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup garlic parmesan wing sauce
  • 1 cup shredded mozzarella

Potatoes

  • 1 pound baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons poultry seasoning
  • 1 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 400°F and prepare a baking sheet for roasting the potatoes.
  2. Prepare Chicken: Trim any fat off the chicken and cut into bite-sized pieces. Place in a large bowl, drizzle with 1 tablespoon olive oil.
  3. Prepare Potatoes: In a separate large bowl, add the halved baby potatoes and 1 tablespoon olive oil.
  4. Mix Seasoning: In a small bowl, combine paprika, poultry seasoning, and black pepper.
  5. Season Chicken and Potatoes: Sprinkle half of the seasoning mixture evenly over the chicken and the other half over the potatoes. Toss both to coat evenly.
  6. Roast Potatoes: Spread the seasoned potatoes evenly on the baking sheet and roast in the oven for 20 minutes until golden and tender.
  7. Cook Chicken: While potatoes roast, heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-10 minutes, stirring occasionally, until browned on all sides and fully cooked through.
  8. Add Butter and Garlic: To the cooked chicken in the skillet, add butter and minced garlic. Stir to combine and cook for 1-2 minutes until fragrant.
  9. Combine Chicken and Potatoes: Add the roasted potatoes from the oven to the skillet with the chicken. Toss everything together off the heat.
  10. Add Sauce: Pour the garlic parmesan wing sauce over the chicken and potatoes. Toss to coat evenly.
  11. Melt Cheese: Sprinkle shredded mozzarella evenly over the top of the mixture. Cover the skillet with a lid and let the cheese melt for about 5 minutes over low heat.

Notes

  • Use chicken breast pieces or tenderloins according to preference. Tenderloins cook slightly faster and are more tender.
  • Ensure potatoes are halved evenly for even roasting.
  • Covering with a lid helps melt the cheese thoroughly and keeps the dish moist.
  • Adjust seasoning amounts to taste.
  • For a crispier potato texture, you can roast them a few minutes longer before combining with chicken.
