Ingredients
Scale
Granola Base
- 3/4 cup oats
- 1/2 tsp cinnamon
- 1/4 cup almond butter
- 3-4 tbsp honey (depending on desired sweetness)
- 1 tsp vanilla extract
Yogurt Filling
- 1 1/2 cups Greek yogurt (preferably full-fat or 2% for creaminess)
Topping
- Berries of choice to top (such as blueberries, raspberries, or strawberries)
Instructions
- Prepare Granola Dough: In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until the mixture forms a sticky dough. If the dough feels too dry or crumbly, add a little more almond butter and honey to reach the right consistency for pressing.
- Form Granola Base: Line a muffin pan with muffin liners. Take a spoonful of the granola dough and press it firmly into the bottom of each muffin cup to create a sturdy base. Make sure the base is compact so it holds together well when frozen.
- Add Yogurt Layer: Spoon about a tablespoon or more of Greek yogurt into each granola base, spreading it evenly over the pressed granola layer.
- Top with Berries and Granola: Place your choice of fresh berries on top of the yogurt in each cup. Sprinkle any leftover granola dough on top for added crunch and texture.
- Freeze: Place the muffin pan in the freezer and allow the cups to set for at least 4 hours to firm up fully.
- Serve: Before serving, let the frozen cups thaw for a few minutes at room temperature to make them easier to eat and bring out the flavors.
Notes
- You can use any type of Greek yogurt depending on your preference for fat content; full-fat or 2% work best for texture and flavor.
- If you want to make this vegan, substitute honey with maple syrup and use a plant-based yogurt.
- Make sure to press the granola base firmly to avoid crumbling when frozen.
- These cups can be stored in the freezer for up to one week.
- Feel free to customize the toppings with different fruits, nuts, or seeds for variety.
