Description

This Frito Corn Salad is a delightful combination of sweet corn, black beans, bell pepper, and cheese, all dressed in a creamy and flavorful dressing, then topped with crunchy Fritos for a satisfying crunch in every bite.

  • 1 (10-ounce) can Rotel, drained
  • 1 bell pepper, diced (red, green, or yellow)

Dressing:

  • 2/3 cup sour cream
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin

Topping:

  • 1 (9.25-ounce) bag Fritos

Instructions

  1. Dressing: In a small bowl, combine all the ingredients listed for the dressing. Whisk until smooth and fully incorporated.
