  • 1 teaspoons dried thyme, divided

Instructions

  1. Preheat and Roast Potatoes: Preheat your oven to 400°F (200°C). Place the sweet potatoes on a baking sheet and pierce each several times with a fork. Roast for 50 to 60 minutes, or until the potatoes are tender enough to easily slice through with a knife.
  2. Caramelize Onions: While the potatoes roast, heat a large pot over low heat and melt 1 tablespoon of butter with the olive oil. Add the thinly sliced onions and ½ teaspoon of salt. Cook slowly over the lowest heat, stirring occasionally, until the onions become richly caramelized, about 50 to 60 minutes. Avoid burning by maintaining low heat; the natural sugars will develop without added sugar, though a teaspoon of brown sugar or honey can be added to speed caramelization if needed.
  3. Slice and Add Cheese to Potatoes: Once the potatoes are roasted, slice each down the center. Sprinkle each with the grated Gruyere cheese and dried thyme. Return the potatoes to the oven for 5 to 10 minutes to allow the cheese to melt thoroughly.
  4. Prepare Crispy Bread Crumbs: While cheese melts, warm a small skillet over medium heat. Add the remaining tablespoon of butter, minced garlic, the rest of the dried thyme, and the seasoned panko bread crumbs. Stir continuously for 5 to 6 minutes until the bread crumbs turn golden brown and crispy. Remove from heat.
  5. Assemble and Serve: Remove the cheesy potatoes from the oven and top each with a generous heap of caramelized onions. Sprinkle the crispy bread crumbs over the onions.
