Simmer Pot Ingredients

  • Water – enough to fill the pot 3/4 full
  • 12 cups whole fresh or frozen cranberries (enough to cover the surface of the water)
  • 1 large orange, sliced
  • 24 sprigs rosemary and/or pine
  • 46 cinnamon sticks
  • 12 tablespoons whole cloves
  • 12 tablespoons allspice berries
  • 1 teaspoon ground nutmeg


Instructions

  1. Fill the Pot: Fill a large pot about 3/4 full with water and place it over high heat to start heating up.
  2. Add Ingredients: Add the cranberries, orange slices, rosemary or pine sprigs, cinnamon sticks, whole cloves, allspice berries, and ground nutmeg directly into the pot of water.
  3. Simmer: Bring the mixture to a boil, then reduce the heat to low to let it simmer gently for 2-3 hours. Keep an eye on the water level and add more if it starts to get low, so there is always some liquid in the pot.
  4. Cool and Rest: After simmering, turn off the heat and allow the pot to cool slightly. Cover the pot and leave it on the turned-off stove to sit overnight or until the next day.
  5. Strain if Finished: If you don’t want to reuse the simmer pot, strain out the liquid and discard or compost the ingredients once cooled.
  6. Next Day Warm-Up: When ready to continue using the pot the next day, remove the lid and bring the mixture to a simmer again, topping with fresh water as necessary to maintain liquid in the pot.
