English Muffin Breakfast Pizza:
- 1 Package of English Muffins
- 8 Eggs
- 1 lb Breakfast Sausage
- 8 oz Thinly Sliced Mild Cheddar Cheese
Sawmill Gravy:
- 2 cups Milk
- 1/4 cup Sausage Drippings (add butter if needed)
- 1/4 cup Flour
- 1/2 teaspoon Salt (or to taste)
- 1/4 teaspoon Pepper (or to taste)
Instructions
- Cook the Meat: Cook breakfast sausage in a cast iron pan until well done. Remove from pan and reserve ¼ cup of fat.
- Make Sawmill Gravy: In the same skillet, add flour to the drippings. Cook and stir over medium heat until golden. Slowly add milk, stirring constantly. Cook until thickened.
- Toast English Muffins: Lightly toast English muffins while making gravy.
- Scramble Eggs: In a non-stick skillet, scramble eggs with a dash of milk for fluffiness.
- Assemble Pizzas: Preheat broiler. On a baking sheet, top toasted English muffins with sawmill gravy, scrambled eggs, cheese slices, and sausage.
- Broil: Toast under broiler until cheese is bubbly and melted.
