Shrimp:
- 1 pound shrimp
Vegetables:
- 2 Tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 1/2 Tablespoons cajun seasoning, divided
- 1 large zucchini, sliced
- 2 bell peppers, cubed
Instructions
- Toss Shrimp: In a bowl, toss shrimp with 1 tablespoon of oil, minced garlic, and ½ tablespoon of cajun seasoning. Set aside.
- Cook Vegetables: Heat the remaining oil and seasonings over medium heat in a large pan. Add the sliced zucchini and cubed bell peppers. Cook for 4-5 minutes. Remove vegetables and set aside in a bowl.
- Cook Shrimp: Add the seasoned shrimp to the pan and cook until shrimp is pink and cooked through, about 5 minutes.
- Combine: Return the cooked vegetables to the pan with the shrimp. Cook until heated through, about 3-4 minutes.
