Description

A quick and flavorful shrimp and vegetable skillet dish that is easy to make and perfect for a delicious weeknight dinner.

Shrimp:

  • 1 pound shrimp

Vegetables:

  • 2 Tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 1/2 Tablespoons cajun seasoning, divided
  • 1 large zucchini, sliced
  • 2 bell peppers, cubed

Instructions

  1. Toss Shrimp: In a bowl, toss shrimp with 1 tablespoon of oil, minced garlic, and ½ tablespoon of cajun seasoning. Set aside.
  2. Cook Vegetables: Heat the remaining oil and seasonings over medium heat in a large pan. Add the sliced zucchini and cubed bell peppers. Cook for 4-5 minutes. Remove vegetables and set aside in a bowl.
  3. Cook Shrimp: Add the seasoned shrimp to the pan and cook until shrimp is pink and cooked through, about 5 minutes.
  4. Combine: Return the cooked vegetables to the pan with the shrimp. Cook until heated through, about 3-4 minutes.
