Description

Celebrate Halloween with these fun and festive Easy Jack-o’-Lantern Quesadillas. Featuring tortillas cut with spooky pumpkin faces, these quesadillas can be made savory with melted cheese or sweet with pumpkin purée, honey, and cinnamon. Perfect for a quick snack or a creative party appetizer, they offer playful presentation combined with delicious flavor in just 13 minutes.

Ingredients

Scale

For the Tortillas

  • 4 tortillas (flour, whole wheat, or any preferred type)

For the Cheese Quesadilla Filling

  • Shredded cheese, about 1 cup (cheddar, Monterey Jack, or blend)

For the Sweet Pumpkin Quesadilla Filling

  • ½ cup pumpkin purée
  • 1 tablespoon honey
  • ½ teaspoon ground cinnamon

Instructions

  1. Cut Jack-o’-Lantern Faces: Using a sharp knife, carefully cut out jack-o’-lantern faces from the desired number of tortillas. Remove the face cutouts and set these decorated tortillas aside for assembly.
  2. Prepare Filling Tortillas: On the remaining plain tortillas, spread your chosen filling evenly. For savory, sprinkle shredded cheese; for sweet, combine pumpkin purée, honey, and cinnamon and spread this mixture.
  3. Cook Face Tortillas: Heat a pan over medium heat. Place each jack-o’-lantern face tortilla in the pan and cook for 2-3 minutes until warmed through and lightly crispy. Remove and set aside.
  4. Cook Filling Tortillas: In the same pan, add the filled tortillas and cook 2-3 minutes until the cheese melts or the sweet filling is warmed.
  5. Assemble and Finish Cooking: Place the jack-o’-lantern face tortilla over the filled side heating in the pan. Continue cooking for another 1-2 minutes until the bottom tortilla is browned. Avoid flipping to prevent filling from spilling out.
  6. Serve: Carefully transfer each assembled quesadilla to plates. Serve cheese quesadillas with guacamole, salsa, or sour cream. For sweet pumpkin quesadillas, accompany with maple syrup for dipping.

Notes

  • Use a sharp knife or small cookie cutters to create detailed jack-o’-lantern faces.
  • Adjust fillings to preference—for vegetarian options, use plant-based cheese.
  • Monitor heat to avoid burning tortillas while ensuring filling is warmed through.
  • Experiment with other sweet or savory fillings as desired.
  • Serve immediately for best texture and freshness.
