Instructions
- Prepare the filling: Add all filling ingredients into a large bowl. Mix together thoroughly using a stiff spatula or spoon to combine flavors well.
- Warm the tortillas: Place two tortillas at a time between a damp paper towel and microwave for 15-20 seconds to keep them flexible and prevent tearing.
- Fill the tortillas: Spoon a large amount of chicken filling onto each warmed tortilla. Tightly roll each tortilla to enclose the filling and prevent spillouts.
- Cook the taquitos: Preheat a cast iron or nonstick skillet over medium heat. Lightly spray with avocado or olive oil. Place the rolled taquitos seam-side down in the skillet.
- Flip and brown: Cook for about 5 minutes until the bottoms are golden brown. Carefully flip and cook for an additional 4-5 minutes until both sides are crispy and golden.
