Main Ingredients
- 1 1/2 lbs ground beef or ground turkey
- 1 large onion, finely diced
- 1 green bell pepper, finely diced
- 3 garlic cloves, minced
- 1 cup red salsa
- 3/4 cup salsa verde
- 1 taco seasoning packet (about 1 oz)
- 1/3 cup chicken stock
- 1 cup sour cream
- 1 cup black beans, drained and rinsed
- 10 3/4 oz (approximately 1 can) cream of mushroom soup
- 3 cups Mexican cheese blend, shredded and divided
- 14 oz family sized Nacho Cheese Doritos, crushed into slightly smaller pieces
Garnishes
- Diced tomatoes
- Lettuce, shredded
- Cilantro, chopped
- Olives, sliced
- Sour cream (for serving)
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C). Lightly grease a 13×9 inch casserole dish with non-stick cooking spray to prevent sticking.
- Cook the meat and vegetables: In a large skillet over medium heat, add the ground beef or turkey along with diced onion, green bell pepper, and minced garlic. Cook until the meat is fully browned and vegetables are softened. Drain any excess fat from the skillet.
- Add salsas and seasoning: Stir in the red salsa, salsa verde, taco seasoning, and chicken stock. Let the mixture cook for about 4 to 5 minutes, allowing the liquid to reduce and thicken. Once thickened, remove the skillet from heat.
- Combine with creamy ingredients: In a large mixing bowl, combine the meat mixture with sour cream, black beans, cream of mushroom soup, and half of the shredded Mexican cheese. Fold everything together gently until evenly mixed.
- Layer the casserole: Spread about 2 cups of crushed Doritos evenly on the bottom of the prepared casserole dish. Spoon half of the meat mixture over the Doritos. Repeat with another layer of Doritos and the remaining meat mixture. Top the final layer with 2 more cups of Doritos and sprinkle the remaining cheese over the top.
- Bake covered: Cover the casserole dish with non-stick foil and bake in the preheated oven for 30 minutes.
- Finish baking uncovered: Remove the foil and bake for an additional 10 to 15 minutes or until the cheese is fully melted and bubbly on top.
- Cool and garnish: Let the casserole cool for about 10 minutes before serving. Garnish with diced tomatoes, shredded lettuce, chopped cilantro, sliced olives, and dollops of sour cream as desired for extra freshness and flavor.
Notes
- Ground turkey can be substituted for a leaner option with similar flavor.
- For a spicier casserole, add chopped jalapeños or a dash of hot sauce to the meat mixture.
- Use gluten-free taco seasoning and cream of mushroom soup to make this recipe gluten-free if needed.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
- To make it vegetarian, substitute the meat with plant-based ground crumbles and use vegetarian soup and stock.
