Frosting

  • 1/2 cup shortening
  • 8 cups (1 to 2 lb bag) confectioners sugar (no sifting)
  • 2 tsp clear vanilla extract
  • 1/3 to 1/2 cup milk, depending on desired frosting thickness

Decoration

  • 1 package small plastic spiders


Instructions

  1. Prepare the Cupcakes: Follow the cake mix package directions by combining the cake mix with the required eggs, oil, and water. Mix well, pour the batter into cupcake liners, and bake as directed. Once baked, allow the cupcakes to cool completely on a wire rack to ensure the frosting adheres well.
  2. Make the Frosting: In a stand mixer fitted with the paddle attachment, cream together the softened butter and shortening until smooth and creamy. Add the clear vanilla extract and mix to incorporate.
  3. Add Sugar and Milk: Gradually add half of the confectioners sugar and most of the milk to the creamed butter mixture. Stir slowly until the mixture is moist, then whip on medium-high speed until well combined. Add the remaining confectioners sugar and milk, and beat for 3-4 minutes, scraping down the bowl sides occasionally. The frosting should be very smooth and spreadable.
  4. Decorate the Cupcakes: Using a large open star piping tip attached to a piping bag, pipe the frosting in a swirl pattern on top of each cooled cupcake. Place several small plastic spiders on the frosting to create a creepy Halloween effect. Serve immediately or store until ready to enjoy.
