Description

Creamy Tuscan Chicken Soup is a comforting and hearty dish that combines tender chicken, flavorful vegetables, pasta, and a creamy broth. This recipe is easy to make and perfect for cozy nights in.


Ingredients

Chicken:

  • 1 teaspoon olive oil
  • 11 1/2 pounds boneless, skinless chicken breasts or thighs, diced into 1-inch pieces
  • 2 teaspoons Italian Seasoning, divided
  • Salt and pepper to taste

Soup Base:

  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onions
  • 1/4 cup diced sundried tomatoes
  • 3 garlic cloves, minced
  • 1/4 cup flour
  • 2 tablespoons tomato paste (optional, see notes)
  • 68 cups chicken broth

Additional Ingredients:

  • 6 oz pasta, such as Italian small shells
  • 1 cup heavy whipping cream
  • 1/21 cup grated parmesan reggiano cheese
  • 2 1/23 cups fresh spinach

Instructions

  1. Cook Chicken: Heat olive oil in a large soup pot. Add chicken, 1 teaspoon of Italian Seasoning, salt, and pepper. Cook until browned.
  2. Prepare Soup Base: Add onions, carrots, celery, sundried tomatoes, and garlic. Cook until translucent. Sprinkle flour, and add tomato paste if using. Stir well.
  3. Add Broth and Pasta: Gradually whisk in chicken broth. Bring to a boil, add pasta and remaining Italian seasoning. Cover and simmer for 20 minutes.
  4. Finish Soup: Stir in heavy cream, spinach, and Parmesan cheese. Simmer for another 5 minutes. Adjust seasoning to taste.

Notes

  • If using tomato paste, add it when incorporating the flour into the soup base.
  • Start with 6 cups of chicken broth, adding more if a thinner consistency is desired.
