For the Chicken:
- 4 boneless, skinless chicken breasts (5–8 oz. each)
- Salt and pepper
- 3 tablespoons butter, divided
- 1 tablespoon olive oil
For the Sauce:
- 1 cup low sodium chicken broth
- 1/2 cup milk
- 1/4 cup sour cream
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 (1 oz.) packet Ranch seasoning mix
To Garnish:
- Fresh parsley, to garnish (optional)
Instructions
- Pound the Chicken: Using a meat mallet, pound the chicken breasts to an even 1” thickness and season with salt and pepper.
- Sear the Chicken: In a skillet, melt 1 tablespoon of butter with olive oil. Sear the chicken on both sides until golden brown. Remove and set aside.
- Prepare the Sauce: Reduce heat, add remaining butter, stir in flour, then pour in chicken broth. Add milk, sour cream, and seasonings. Combine until smooth.
- Simmer: Return chicken to the pan, spoon sauce over it, and simmer until heated through and sauce thickens slightly.
- Serve: Plate the chicken, top with sauce, and garnish with parsley before serving.
Notes
- For a richer sauce, you can use heavy cream instead of milk.
- Adjust the seasoning to your preference by adding more or less ranch seasoning mix.
- This dish pairs well with steamed vegetables or mashed potatoes.
