Hummus Base

  • 1 (400 ml) can chickpeas, drained (reserve 5 tablespoons of the liquid and some chickpeas for garnish)
  • ¼ cup tahini sesame paste
  • ¼ cup basil pesto (plus more for garnish)
  • 4 tablespoons extra virgin olive oil (plus more for garnish)
  • 3 tablespoons freshly squeezed lemon juice
  • 1 large clove of garlic, roughly chopped
  • ½ teaspoon salt

For Garnish

  • Reserved chickpeas
  • Roasted sesame seeds
  • Basil pesto
  • Extra virgin olive oil


Instructions

  1. Prepare the Ingredients: Drain the chickpeas from the can, reserving 5 tablespoons of the chickpea liquid and some whole chickpeas for garnish. Roughly chop one large clove of garlic.
  2. Blend the Hummus: Place the drained chickpeas, reserved chickpea liquid, ¼ cup basil pesto, ¼ cup tahini sesame paste, 4 tablespoons extra virgin olive oil, 3 tablespoons freshly squeezed lemon juice, roughly chopped garlic, and ½ teaspoon salt into a blender or food processor. Puree until the mixture is smooth, creamy, and well blended.
  3. Transfer and Garnish: Pour the blended pesto hummus into a serving bowl. Drizzle additional olive oil on top, then garnish with the reserved whole chickpeas, roasted sesame seeds, and a few spoonfuls of basil pesto for an appealing presentation and added flavor.
  4. Serve: Enjoy the pesto hummus as a dip or spread with your favourite breads like sourdough crackers, pita bread, or naan flatbread, or opt for a gluten-free option by serving it alongside fresh fruit and vegetables.
