Garlic Sauce
- 1 whole garlic bulb (about 8-9 garlic cloves)
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Prepare Chicken: Using a sharp knife, fillet each chicken breast into two thinner cutlets or use thin-cut chicken breasts. Season each cutlet evenly with Italian seasoning, salt, and black pepper. Then sprinkle all-purpose flour over both sides and rub gently to coat.
- Cook Chicken: Heat a large skillet over medium heat and add olive oil and 1 tablespoon of butter. When hot, add chicken cutlets and cook for about 4 minutes per side until golden brown and fully cooked. Remove from skillet, place on a clean plate, and cover to keep warm.
- Prepare Garlic: Peel garlic cloves from the bulb. Using the side of a large chef’s knife, carefully smash each clove by pressing down with the heel of your hand to release flavor.
- Sauté Garlic: In the same skillet, add remaining 1 tablespoon of butter and the smashed garlic cloves. Reduce heat to medium-low and sauté garlic for 3 minutes, stirring frequently until cloves are lightly browned and fragrant. Be careful not to burn the garlic.
- Make Sauce: Pour chicken broth and heavy cream into the skillet. Add garlic powder and stir well, scraping up any browned bits from the bottom for extra flavor. Let the sauce simmer for 8-10 minutes until it reduces and thickens by approximately 50%. Taste the sauce and season with about 1/8 teaspoon salt and 1/8 teaspoon black pepper as needed.
- Finish and Serve: Return chicken cutlets to the skillet and spoon the creamy garlic sauce over them. Allow the chicken to heat through briefly. Optionally garnish with freshly chopped parsley. Serve immediately and enjoy your creamy garlic chicken.
