Ingredients

3. 1/2 cup reserved pasta water
For the Chicken:
1. 2 boneless skinless chicken breasts
2. 1 1/2 to 2 tablespoons Cajun seasoning, divided
3. 2 teaspoons olive oil
4. 2 tablespoons unsalted butter
5. 3 garlic cloves, minced
6. 2/3 cup diced tomatoes
7. 1 1/2 cups heavy whipping cream
8. 1/2 cup grated Parmesan cheese
9. 2 tablespoons finely chopped parsley
10. Salt and pepper to taste
Instructions
- Cook Pasta: Bring a large pot of water to a boil, add 1/2 teaspoon salt, and cook the linguine until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta, cover it, and keep warm.
- Prepare Chicken: Flatten the chicken breasts to an even thickness, then season all over with 1 1/2 tablespoons Cajun seasoning. Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add the chicken and sear on both sides until browned. Reduce heat to low and cook until the chicken reaches 165°F internally. Transfer to a cutting board, slice into thin strips, and keep warm.
