Ingredients
Scale
Gelatin Base
- 2 (3-ounce) packages cranberry flavored gelatin
- 1 ½ cups boiling water
Fruit and Zest
- 1 (14-ounce) can cranberry sauce, whole berry
- 1 (20-ounce) can crushed pineapple, not drained
- 2 tablespoons orange zest
- 1 tablespoon lemon zest
Instructions
- Dissolve Gelatin: In a large bowl, add the 2 packages of cranberry flavored gelatin to 1 ½ cups boiling water. Stir continuously until the gelatin is completely dissolved and the mixture is smooth.
- Add Fruit and Zests: Stir in the entire can of whole berry cranberry sauce, the crushed pineapple with its juice, followed by the orange and lemon zest. Mix thoroughly to combine all ingredients evenly.
- Chill and Set: Pour the combined mixture into a large serving bowl. Cover the bowl, then place it in the refrigerator and chill for at least 4 hours to allow the Jello salad to set firmly before serving.
Notes
- For best flavor, use fresh orange and lemon zest.
- Do not drain the pineapple; the juice helps the jelly set and enhances flavor.
- Make sure the gelatin is completely dissolved to avoid grainy texture.
- This salad can be prepared a day ahead to save time.
- Serve chilled as a side dish or a light dessert during holiday meals.
