  • 1 cup brown sugar
  • 1 cup water
  • 1/4 teaspoon freshly grated nutmeg
  • 3 cinnamon sticks

Bursting Cranberries

  • 1 cup fresh cranberries
  • 1/3 cup water

Punch

  • 1 1/2 cups apple cider
  • 3/4 cups cranberry juice
  • 2/3 cup ginger beer
  • 1/3 cup autumn simple syrup


Instructions

  1. Make Autumn Simple Syrup: Combine brown sugar, water, freshly grated nutmeg, cinnamon sticks, star anise, and orange rind in a saucepan over medium-low heat. Whisk constantly until the sugar dissolves, then let it simmer for 2 to 3 minutes. Remove from heat and allow the syrup to cool completely. The spices and rind can remain in the syrup for enhanced flavor but be sure to remove them before using it in the punch.
  2. Prepare Bursting Cranberries: In a separate saucepan, add fresh cranberries and water, and heat over medium heat until the water begins to simmer and cranberries start to burst, about 3 to 4 minutes. Remove from heat and set aside. These bursting cranberries can be used both in the punch and as an attractive garnish for the glasses.
  3. Assemble the Punch: Gently stir together apple cider, cranberry juice, ginger beer, and the prepared autumn simple syrup. The ginger beer will add a pleasant fizz to the punch. Taste the mixture and adjust sweetness by adding more simple syrup or cider if necessary, depending on your ginger beer’s spiciness. For a milder ginger flavor, ginger ale can be substituted but reduce the amount of simple syrup accordingly. Serve the punch over crushed ice for best taste and texture and garnish with the bursting cranberries for a festive presentation.
