Steak Bites
- 1 tablespoon extra virgin olive oil
- 1 pound steak, cut into 1-inch pieces (top sirloin or ribeye work well)
Cowboy Butter
- 1 recipe cowboy butter, divided (typically made with butter, garlic, herbs, spices, and lemon juice)
Instructions
- Heat the skillet: Preheat a medium skillet over medium-high heat until hot and shimmering.
- Sear the steak bites: Add olive oil to the hot skillet. Place steak pieces in a single layer (work in batches if needed) and sear without moving for 1 ½ to 2 minutes. Flip and sear the other side for 1 to 2 minutes until desired doneness is achieved.
- Coat with cowboy butter: Reduce heat to medium and add half of the cowboy butter to the skillet. Toss the steak bites to coat evenly and cook for 1 more minute until the butter melts and glazes the steak.
- Melt remaining butter and serve: Warm the remaining cowboy butter in the microwave and serve it on the side for dipping or drizzling over the steak bites.
