  • 1 garlic clove
  • 1/2 teaspoon salt plus more for cooking pasta
  • 1/2 teaspoon black pepper

Pasta:

  • 1 pound linguine
  • 4 tablespoons unsalted butter at room temperature
  • 1/4 cup chopped fresh parsley (optional)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Sauce: Add cottage cheese, Parmesan cheese, butter, garlic, salt, and pepper to a high-speed blender. Process until smooth to create an Alfredo-like sauce.
  2. Pasta: Bring a large pot of salted water to a boil. Cook linguine until al dente. Drain pasta, reserving 1 cup of cooking liquid. Return pasta to pot, add Alfredo sauce and ½ cup pasta water. Cook over low heat, stirring until warm and liquid is absorbed, about 3 minutes.
