Sauce:
- 2 cups cottage cheese 4% fat
- 1/2 cup freshly grated Parmesan cheese
- 1 garlic clove
- 1/2 teaspoon salt plus more for cooking pasta
- 1/2 teaspoon black pepper
Pasta:
- 1 pound linguine
- 4 tablespoons unsalted butter at room temperature
- 1/4 cup chopped fresh parsley (optional)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Sauce: Add cottage cheese, Parmesan cheese, butter, garlic, salt, and pepper to a high-speed blender. Process until smooth to create an Alfredo-like sauce.
- Pasta: Bring a large pot of salted water to a boil. Cook linguine until al dente. Drain pasta, reserving 1 cup of cooking liquid. Return pasta to pot, add Alfredo sauce and ½ cup pasta water. Cook over low heat, stirring until warm and liquid is absorbed, about 3 minutes.
- Remove from heat, garnish with parsley and Parmesan cheese, if desired, before serving.
