Cheese Mixture:

Breading Station:

- 2 large eggs
- 1/4 cup milk
- 2 cups panko bread crumbs
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
Other:
- Vegetable oil or other neutral oil, for frying
- Ranch dressing for serving
Instructions
- Cheese Mixture: In a large bowl, stir together the shredded mozzarella, cheddar, jalapenos, and garlic until evenly combined.
- Form Balls: Form the cheese mixture into 10 balls by squeezing tightly. Freeze the balls for 4 hours.
- Heat Oil: Heat oil in a saucepan to 350°F.
- Breading Station: Set up three bowls for flour, egg wash, and panko mixture.
- Bread Balls: Roll each frozen cheese ball in flour, egg wash, and bread crumbs.
- Fry: Fry the cheese bites for 2 minutes per side until golden brown and melty on the inside.
- Drain and Serve: Remove the bites and drain on a wire rack. Serve with ranch dressing.
