Description

These Cookie Dough Bites are a delicious and healthy snack made from oats, nuts, honey, and chocolate chips. They are no-bake, easy to prepare, and perfect for freezing to enjoy anytime you crave a sweet treat without guilt.

  • 3/4 cup old fashioned oats
  • 3/4 cup walnuts
  • 1/2 cup raw cashews
  • 1/4 cup chocolate chips (semi sweet or vegan)

Wet Ingredients

  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut oil


Instructions

  1. Grind Ingredients: Place the old fashioned oats, walnuts, and raw cashews into a food processor. Blend for about 1 minute or until the mixture is finely ground.
  2. Add Wet Ingredients and Chocolate Chips: Add the honey, vanilla extract, coconut oil, and chocolate chips to the food processor bowl with the ground oat and nut mixture. Pulse several times just until everything is combined and the chocolate chips are mixed in without being overly chopped.
  3. Form into Balls: Using a 1 teaspoon measure, scoop out the mixture and roll it between your hands to form bite-sized balls.
  4. Freeze the Bites: Place the formed cookie dough bites in a single layer on a cookie sheet and freeze for 20-30 minutes to set.
  5. Store: Once frozen, transfer the cookie dough bites to a zip-top freezer bag or an airtight glass container. Label with the date and keep frozen for up to 3 months.

Notes

  • For vegan option, use vegan chocolate chips and replace honey with maple syrup or agave nectar.
  • You can substitute any nuts you prefer or have on hand.
  • Make sure to pulse gently after adding chocolate chips to avoid crushing them too much.
