This Fresh & Healthy Cilantro Lime Pasta Salad is a vibrant and flavorful dish that’s perfect for a light lunch or as a side. With a zesty cilantro lime dressing, this salad is packed with wholesome ingredients like chickpeas, corn, and crunchy vegetables.

Cilantro Lime Dressing:

  • 1 batch Greek Yogurt Avocado Salad Dressing (double the cilantro, omit the parsley)

Pasta Salad:

  • 1 375g box pasta (short pasta like rotini, fusilli, or penne), cooked
  • 1 19 oz. can chickpeas, drained and rinsed
  • 1 12 oz. can corn, drained and rinsed
  • 1 medium cucumber, chopped
  • 1 small red onion, diced
  • 1/2 cup feta cheese or cojita cheese, crumbled
  • cilantro, optional, for garnish
  • lime juice, optional, to squeeze on top

Instructions

  1. Make the Cilantro Lime Dressing: Blitz the ingredients together in a blender or food processor. Set aside.
  2. Prepare the Pasta Salad: Combine the cooked pasta, chickpeas, corn, cucumber, and red onion in a large bowl.
  3. Toss with Dressing: Drizzle the dressing over the salad and toss until well-coated.
  4. Add Feta Cheese: Sprinkle feta cheese on top and gently mix into the salad.
  5. Serve: Garnish with cilantro leaves and a squeeze of lime. Enjoy!
