Ingredients

Units Scale

Waffle Batter

  • 6 tbsp Land O Lakes® Salted Butter
  • 1 cup pumpkin puree
  • 1 1/2 cups spiced apple cider
  • 2 large eggs
  • 2 tbsp pure maple syrup
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/2 tsp kosher salt

Salted Maple Butter

  • 6 tbsp Land O Lakes® Salted Butter
  • 1/2 cup maple syrup
  • 1 pinch flaky sea salt

Instructions

  1. Brown the Butter: Add 6 tablespoons butter to a medium pot set over medium heat. Allow the butter to brown until it smells toasted, about 2-3 minutes, stirring often to prevent burning. Once browned, remove from heat and pour into a large mixing bowl.
  2. Mix Wet Ingredients: Whisk in the pumpkin puree, spiced apple cider, eggs, maple syrup, and vanilla extract into the browned butter until fully combined.
  3. Combine Dry Ingredients and Form Batter: Add the all-purpose flour, baking powder, baking soda, cinnamon, ground ginger, nutmeg, and kosher salt into the wet mixture. Stir gently until just combined; it’s okay if the batter is a little lumpy. Let the batter sit for 10 minutes to hydrate.
  4. Make Salted Maple Butter: In a small bowl, mix together 6 tablespoons softened salted butter, ½ cup maple syrup, and a pinch of flaky sea salt until smooth. Set aside for serving.
  5. Preheat and Cook Waffles: Preheat your waffle iron according to the manufacturer’s instructions. Pour batter onto the waffle iron and cook until waffles are golden brown and cooked through, typically 4-6 minutes depending on your appliance.
  6. Serve: Serve the warm waffles topped generously with the salted maple butter and additional maple syrup if desired. Enjoy immediately for best flavor and texture.

Notes

  • Allowing the batter to rest for 10 minutes helps the flour hydrate, ensuring fluffy waffles.
  • Browned butter adds a rich, nutty flavor to the waffles and maple butter.
  • You can substitute pumpkin puree with sweet potato puree if preferred.
  • Make sure your waffle iron is well preheated to prevent sticking and ensure even cooking.
  • Store leftover salted maple butter in an airtight container in the refrigerator and bring to room temperature before serving.
