Description

This festive Christmas Jello Poke Cake is a delightful holiday treat featuring a moist white cake infused with vibrant strawberry and lime jello flavors. The colorful jello puddles formed by poking holes in the cake add a fun texture and a burst of fruity taste, all topped with creamy white frosting and festive sprinkles. Perfect for holiday parties and gatherings, this cake combines classic cake baking with a playful poke cake technique for a visually stunning and delicious dessert.

Ingredients

Scale

Cake

  • 16.25 ounces white cake mix
  • Ingredients called for on the cake mix box (usually eggs, oil, water)

Jello Mixtures

  • 3 ounces strawberry jello mix
  • 3 ounces lime jello mix
  • 2 cups boiling water, divided
  • 1 cup cold water, divided

Topping

  • 16 ounces white frosting
  • Christmas sprinkles

Instructions

  1. Prepare the cake: Mix the white cake mix with the required ingredients as per the package instructions. Pour the batter into a greased 9×13 inch pan and bake until the top is golden and a toothpick inserted near the center comes out with just a few moist crumbs. Remove from oven and allow to cool for 15 minutes.
  2. Make the strawberry jello mixture: In a medium bowl, combine the strawberry jello powder with 1 cup boiling water. Whisk vigorously for 2 minutes until fully dissolved. Stir in 1/2 cup cold water and set aside to cool slightly.
  3. Make the lime jello mixture: Similarly, in another bowl, prepare the lime jello by dissolving the powder in 1 cup boiling water, whisking for 2 minutes, then adding 1/2 cup cold water. Set aside.
  4. Poke the cake: Using the handle of a wooden spoon, poke evenly spaced holes all over the surface of the warm cake, making sure to go about halfway through.
  5. Fill the holes with jello: Alternate spooning the strawberry and lime jello mixtures into the holes created on the cake, allowing the jello to seep in and fill the cavities.
  6. Chill the cake: Place the cake in the refrigerator for at least 3 hours to let the jello set completely inside the cake.
  7. Frost and decorate: Once the jello has set, spread the white frosting evenly over the top of the cake. Decorate with Christmas sprinkles for a festive touch. Slice and serve chilled.

Notes

  • Store leftovers covered in the refrigerator for up to 3 days to maintain freshness.
  • Ensure the cake has cooled slightly before poking holes to prevent it from breaking apart.
  • Use a sturdy spoon handle to create even holes that allow the jello to penetrate deeply for the best effect.
  • Feel free to substitute the jello flavors for other festive colors and tastes.
