Instructions

  1. Make the Ganache: Place the chopped dark chocolate and butter in a medium heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Pour the hot cream over the chocolate and butter, allowing it to sit for 5 minutes to melt. Whisk the mixture until smooth and glossy. Cover and refrigerate until firm, about 1 hour.
  2. Shape the Truffles: Line a large baking sheet with parchment paper. Using a small cookie scoop or spoon, scoop the chilled ganache and quickly roll it into smooth balls using your hands. Place the formed truffles on the prepared baking sheet. Refrigerate again until firm, about 30 minutes.
