Instructions

- Add Almond Extract and Chill: Transfer the melted chocolate mixture into a mixing bowl. Add the almond extract and beat on low speed for 1-2 minutes until the mixture is smooth and glossy. Cover the bowl with plastic wrap and refrigerate for approximately 2 hours, allowing the ganache to set and firm up.
- Form and Coat Truffles: Using a small spoon or melon baller, scoop out about 3/4-inch portions of the chilled mixture and roll each into a ball with your hands. Roll each truffle in the chopped almonds to coat evenly. Place the almond-coated truffles on a parchment-lined baking sheet and freeze for about 1 hour to set.
- Dip in White Chocolate: Insert a toothpick into each chilled truffle and dip them one by one into the melted white chocolate, ensuring they are fully coated.
