Description

This Copycat Chipotle Chicken Avocado Melt recipe is a delicious and easy-to-make sandwich that combines the flavors of spicy chipotle mayo, creamy avocado, tender shredded chicken, and gooey gouda cheese. Perfect for a quick lunch or dinner!


Ingredients

Focaccia Bread:

  • 2 flat loaves of focaccia bread, preferably garlic herb

Chipotle Mayo:

  • 1/4 cup mayo
  • 6 chipotle peppers in adobo sauce, chopped

Filling:

  • 6 oz shredded rotisserie chicken
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup Peppadew peppers or sweet & hot cherry peppers, chopped
  • 4 oz gouda cheese, sliced

Additional:

  • 2 tablespoons water

Instructions

  1. Prepare Chipotle Mayo: In a small bowl, mix chopped chipotle peppers in adobo with mayo. Set aside.
  2. Assemble Sandwiches: Slice focaccia loaves into 8 square pieces. Spread chipotle mayo on each slice. Layer cheese, avocado, chicken, cilantro, and peppers on half of the slices. Top with remaining slices.
  3. Cook: Cook sandwiches in a skillet over medium-high heat for 2-3 minutes per side. Add water, cover, and steam for 1 minute. Uncover and serve.
