Focaccia Bread:
- 2 flat loaves of focaccia bread, preferably garlic herb
Chipotle Mayo:
- 1/4 cup mayo
- 6 chipotle peppers in adobo sauce, chopped
Filling:
- 6 oz shredded rotisserie chicken
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup Peppadew peppers or sweet & hot cherry peppers, chopped
- 4 oz gouda cheese, sliced
Additional:
- 2 tablespoons water
Instructions
- Prepare Chipotle Mayo: In a small bowl, mix chopped chipotle peppers in adobo with mayo. Set aside.
- Assemble Sandwiches: Slice focaccia loaves into 8 square pieces. Spread chipotle mayo on each slice. Layer cheese, avocado, chicken, cilantro, and peppers on half of the slices. Top with remaining slices.
- Cook: Cook sandwiches in a skillet over medium-high heat for 2-3 minutes per side. Add water, cover, and steam for 1 minute. Uncover and serve.
