Description

This Chicken Caesar Pasta Salad combines the flavors of a classic Caesar salad with the heartiness of pasta, making it a satisfying meal on its own or a delicious side dish.

Pasta:

  • 1 cup dry pasta, cooked according to package directions

Additional Ingredients:

  • 6 slices thick-cut bacon, cooked crisp and crumbled
  • 1 tbsp bacon grease
  • 1 cup cooked rotisserie chicken, roughly chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup shredded Parmesan cheese
  • 2 cups chopped romaine or green leaf lettuce
  • Salt and pepper to taste
  • 1/2 cup Caesar dressing, or more to taste
  • 1 cup croutons (optional)

Instructions

  1. Cook the Pasta: Cook pasta according to package directions. Drain, rinse under cold water, and set aside.
  2. Prepare Bacon: Cook the bacon until crisp, then crumble it, reserving 1 tbsp of bacon grease.
  3. Combine Ingredients: In a bowl, toss the cooled pasta with the bacon drippings. Add in all other ingredients and stir thoroughly.
  4. Add Dressing: Adjust the amount of Caesar dressing to taste, toss to coat all ingredients evenly.
