Description

This Vegetable Casserole is a comforting and easy-to-make dish that combines frozen broccoli, carrots, and cauliflower with creamy Velveeta cheese and a buttery Ritz cracker topping. Perfect for a family dinner or potluck!


Ingredients

Broccoli:

1 (16 ounce) bag frozen

Carrots:

1 (16 ounce) bag frozen

Cauliflower:

1 (16 ounce) bag frozen

Velveeta:

1 (16 ounce) package sliced

Ritz Crackers:

1 roll crushed

Butter:

1/4 cup melted (1/2 stick)


Instructions

  1. Preheat Oven: Preheat oven to 350 degrees.
  2. Microwave Vegetables: In a large microwave-safe bowl, combine broccoli, carrots, and cauliflower. Microwave on high for 12 to 15 minutes until warm.
  3. Transfer to Baking Dish: Transfer the warmed vegetables to a 9×13 baking dish.
  4. Add Velveeta: Layer sliced Velveeta over the vegetables.
  5. Prepare Cracker Topping: In a medium bowl, mix crushed Ritz crackers with melted butter. Sprinkle over the Velveeta.
