- 2 eggs, beaten
- 1/2 cup whole milk

Instructions
- Prep the Batter: In a large bowl, combine the corn kernels, flour, paprika, cayenne pepper, sugar, baking powder, salt, and pepper. Stir to combine.
- Mix Wet Ingredients: Add beaten eggs and milk to the dry ingredients. Stir until mixed. Add green onion and cheddar cheese, then gently stir until combined.
- Cook the Fritters: Heat oil in a skillet over medium heat. Drop batter in 2 tablespoon portions, flatten them, and cook until golden brown and crispy, about 3-4 minutes per side.
- Serve: Work in batches with the remaining batter, then remove the fritters to a paper towel-lined plate.
