For the Casserole:
- 1 pound chicken breasts, cut into 1×1-inch cubes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups white long grain rice, rinsed
- 2 cups chicken stock
- 2 cups water
- 3 cups broccoli florets, roughly chopped
- 1/2 cup milk
- 2 cups sharp cheddar cheese, shredded, divided
Instructions
- Cut and Season Chicken: Cut chicken into cubes, season with salt and pepper.
- Brown Chicken: Brown chicken in a pan for 5-7 minutes. Remove and set aside.
- Cook Aromatics: Cook onion and garlic until soft. Add chicken back to the pot.
- Cook Rice and Broccoli: Add rice, stock, and water. After 10 minutes, add broccoli. Cook until rice is done.
- Finish Casserole: Stir in milk and 1 cup cheese. Top with remaining cheese. Bake at 425°F for 10-15 minutes.
Notes
- For a crispier cheese topping, broil the casserole for the last 1-2 minutes.
