This Cheesy Broccoli Chicken and Rice Casserole is a comforting and flavorful dish that combines tender chicken, fluffy rice, fresh broccoli, and gooey cheddar cheese, all baked to perfection.

For the Casserole:

  • 1 pound chicken breasts, cut into 1×1-inch cubes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups white long grain rice, rinsed
  • 2 cups chicken stock
  • 2 cups water
  • 3 cups broccoli florets, roughly chopped
  • 1/2 cup milk
  • 2 cups sharp cheddar cheese, shredded, divided

Instructions

  1. Cut and Season Chicken: Cut chicken into cubes, season with salt and pepper.
  2. Brown Chicken: Brown chicken in a pan for 5-7 minutes. Remove and set aside.
  3. Cook Aromatics: Cook onion and garlic until soft. Add chicken back to the pot.
  4. Cook Rice and Broccoli: Add rice, stock, and water. After 10 minutes, add broccoli. Cook until rice is done.
