Chicken and Potato Mixture

  • 3 chicken breasts, cut lengthwise into 4 pieces each
  • 1.8 pound bag Petite Red Potatoes, halved
  • ½ yellow onion, finely chopped
  • 6 tablespoons melted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon smoked paprika
  • ½ teaspoon chipotle chili powder
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder

Toppings

  • 6 strips bacon, cooked and chopped
  • 3 cups Colby Jack cheese, shredded
  • ¼ cup chives, chopped


Instructions

  1. Preheat and Prepare Foil: Preheat the oven to 400 degrees Fahrenheit. Tear 4 long pieces of aluminum foil, folding each piece in half to reinforce strength and prevent leaks. Set aside.
  2. Parboil Potatoes: Place the halved Petite Red Potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook for 6 minutes until slightly tender. Drain and return potatoes to the pot to cool slightly.
  3. Season Chicken and Potatoes: In the pot with the potatoes, add the cut chicken pieces, finely chopped yellow onion, melted butter, minced garlic, smoked paprika, chipotle chili powder, salt, ground black pepper, and garlic powder. Toss thoroughly to coat all chicken and potato pieces evenly with the seasoning and butter.
  4. Assemble Foil Packets: Divide the potatoes equally, placing about 1 ½ cups in the center of each foil piece. Top each with 4 chicken pieces. Fold the edges of the foil lengthwise together to seal the packets tightly and roll the edges to prevent leaks. Place the sealed packets on a baking sheet.
