Description

This Cauliflower Jalapeno Popper Casserole is a creamy, spicy twist on the classic jalapeno popper appetizer, featuring chicken, bacon, cauliflower, and plenty of cheese.

For the Casserole:

  • 1 lb chicken breast
  • 6 jalapenos, halved and seeds removed
  • 2 tablespoons olive oil
  • 6 strips thick-cut bacon
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese, 1/3 less fat
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne
  • 3 cups fresh cauliflower florets, cut into small bite-size pieces

Instructions

  1. Preheat the Oven: Heat oven to 375 degrees.
  2. Bake Chicken and Jalapenos: Place chicken breast and jalapenos on a baking sheet, drizzle with olive oil, and salt. Place bacon strips on another baking sheet. Bake both until done, about 20-25 minutes.
  3. Prepare Cheese Mixture: Mix ¾ cup cheddar cheese, cream cheese, sour cream, milk, and cayenne in a large bowl.
  4. Combine Ingredients: Crumble bacon, shred chicken, dice jalapenos. Add them to the cheese mixture.
  5. Assemble Casserole: In a baking dish, layer cauliflower, cheese mixture, remaining jalapenos, bacon, and cheddar cheese.
