For the Casserole:
- 1 lb chicken breast
- 6 jalapenos, halved and seeds removed
- 2 tablespoons olive oil
- 6 strips thick-cut bacon
- 1 1/4 cup cheddar cheese
- 8 oz cream cheese, 1/3 less fat
- 1/2 cup light sour cream
- 1/4 cup low-fat milk
- 1 teaspoon cayenne
- 3 cups fresh cauliflower florets, cut into small bite-size pieces
Instructions
- Preheat the Oven: Heat oven to 375 degrees.
- Bake Chicken and Jalapenos: Place chicken breast and jalapenos on a baking sheet, drizzle with olive oil, and salt. Place bacon strips on another baking sheet. Bake both until done, about 20-25 minutes.
- Prepare Cheese Mixture: Mix ¾ cup cheddar cheese, cream cheese, sour cream, milk, and cayenne in a large bowl.
- Combine Ingredients: Crumble bacon, shred chicken, dice jalapenos. Add them to the cheese mixture.
- Assemble Casserole: In a baking dish, layer cauliflower, cheese mixture, remaining jalapenos, bacon, and cheddar cheese.
- Bake: Bake for 20 minutes or until golden brown.
