For the Caramelized Onions
- 4 tablespoons unsalted butter
- 4 sweet onions, chopped
- 1/2 teaspoon kosher salt (plus more for seasoning)
- Freshly ground black pepper (at least 1/2 teaspoon, plus more for seasoning)
For the Dip
- 1 cup sour cream or plain Greek yogurt
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- Fresh herbs, like parsley, for topping
Instructions
- Caramelize the Onions: Heat the butter in a large skillet over medium heat. Once melted, add the chopped onions along with a pinch of salt and pepper. Cook for about 5 minutes, stirring occasionally, until the onions begin to soften.
- Slow Cook the Onions: Reduce the heat to low or medium-low and continue cooking, stirring often, until the onions turn dark brown and caramelized, about 30 to 60 minutes. If the pan becomes dry, splash with water to prevent burning. Keep a close eye and stir regularly.
- Cool the Onions: Once caramelized, remove from heat and let the onions cool slightly. You can prepare them ahead of time and refrigerate until use.
- Make the Dip Base: In a mixing bowl, whisk together the sour cream, mayonnaise, garlic powder, and a pinch of salt and pepper until smooth and combined.
- Combine and Finish: Add the cooled caramelized onions to the dip mixture and stir until evenly incorporated. Taste and adjust salt if necessary. Top with chopped fresh herbs like parsley before serving.
Notes
- Caramelized onions can be prepared a day or two in advance and stored in an airtight container in the refrigerator.
- The dip can be made ahead of time and will thicken slightly in the fridge, but can be loosened with a bit of water or milk before serving.
- Best served with chips, crackers, pretzels, or fresh vegetables.
