  • 1 large head cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Buffalo Sauce:

  • 1/2 cup hot sauce
  • 2 tablespoons butter, melted
  • 1/2 tablespoon lemon juice

For Serving:

  • Ranch or blue cheese dressing
  • Carrots and celery sticks

Instructions

  1. Preheat oven: To 450°F. Grease a baking sheet with cooking spray or line it with parchment paper.
  2. Prepare batter: In a large bowl, whisk flour, water, garlic powder, paprika, salt, and pepper until smooth. Add cauliflower to the batter and coat evenly.
  3. Bake cauliflower: Spread cauliflower on the baking sheet in a single layer with space between them. Bake for 20-25 minutes, flipping halfway through until lightly browned.
  4. Make buffalo sauce: In a small bowl, mix hot sauce, melted butter, and lemon juice. Brush the sauce on the cauliflower.
  5. Continue baking: Return to the oven and bake for an additional 15 minutes until browned.
  6. Serve: Hot with ranch dressing, celery, and carrot sticks.

Notes

  • For extra crispiness, you can broil the cauliflower for a few minutes at the end.
  • Adjust the hot sauce to your preferred level of spiciness.
