Cauliflower Bites:
- 1 large head cauliflower, cut into florets

- 1/2 cup water

- 1 teaspoon paprika

Buffalo Sauce:
- 1/2 cup hot sauce
- 2 tablespoons butter, melted
- 1/2 tablespoon lemon juice
For Serving:
- Ranch or blue cheese dressing
- Carrots and celery sticks
Instructions
- Preheat oven: To 450°F. Grease a baking sheet with cooking spray or line it with parchment paper.
- Prepare batter: In a large bowl, whisk flour, water, garlic powder, paprika, salt, and pepper until smooth. Add cauliflower to the batter and coat evenly.
- Bake cauliflower: Spread cauliflower on the baking sheet in a single layer with space between them. Bake for 20-25 minutes, flipping halfway through until lightly browned.
- Make buffalo sauce: In a small bowl, mix hot sauce, melted butter, and lemon juice. Brush the sauce on the cauliflower.
- Continue baking: Return to the oven and bake for an additional 15 minutes until browned.
- Serve: Hot with ranch dressing, celery, and carrot sticks.
