Chicken:
- 2 large chicken breasts
- 1/2 teaspoon garlic powder
- Salt & pepper to taste
Sauce:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 medium onion, chopped
- 3/4 cup chicken broth (use low sodium if sensitive to salt)
- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
- 1–2 tablespoons chopped parsley, to taste (optional)
Instructions
- Prepare the Chicken: Cut the chicken breasts in half lengthwise to get 4 thinner pieces. Season them with garlic powder, salt, and pepper.
- Cook the Chicken: In a skillet over medium-high heat, cook the chicken for about 5-6 minutes per side or until cooked through. Transfer to a plate.
- Make the Sauce: In the same skillet, sauté onions until softened. Add chicken broth and Boursin cheese. Stir until smooth. Let it simmer for 5 minutes, then add parsley if desired.
- Combine and Serve: Return the chicken to the skillet, warm through, and ensure the sauce thickens. Adjust seasoning as needed. Serve hot.
