Description

This Bourbon Baked Apples recipe features tender honeycrisp apples stuffed with a delicious mixture of oats, brown sugar, flour, cinnamon, and butter, then baked to perfection in apple cider and bourbon. The warm, caramelized apples paired with the boozy sauce and served with cinnamon or vanilla ice cream make for an irresistible dessert perfect for fall or any cozy occasion.

Ingredients

Scale

Apples

  • 6 large honeycrisp apples

Filling

  • 2/3 cup oats
  • 2/3 cup loosely packed brown sugar
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup softened unsalted butter
  • 1 teaspoon vanilla extract

Baking Liquid

  • 1 cup apple cider
  • 1/3 cup bourbon, or less depending on preference

For Serving

  • Cinnamon ice cream or pumpkin or vanilla ice cream

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare for baking the apples evenly and achieve a nicely soft texture.
  2. Prepare the apples: Core each apple about two-thirds of the way down using an apple corer or paring knife. Carefully cut around the stem about one inch downward, then remove the core and seeds without piercing through the bottom of the apple.
  3. Make the filling: In a bowl, mix oats, brown sugar, flour, salt, and cinnamon. Add softened butter and vanilla extract, then combine thoroughly using a fork and your hands until the mixture clumps together. Optional: add nuts for extra texture and flavor.
  4. Stuff the apples: Evenly stuff each apple with the oat mixture. For added flavor, sprinkle some extra cinnamon on top of the filling inside each apple.
  5. Arrange and add liquids: Place the stuffed apples upright in a large baking dish. Pour the apple cider and bourbon mixture around the apples in the bottom of the dish.
  6. Bake the apples: Bake for about 45 minutes, or 30 minutes if using smaller apples. Every 10 minutes or so, spoon some of the bourbon and cider mixture over the tops of the apples to keep them moist and flavorful. The apples are done when their skins are wrinkly and darkened.
  7. Serve: Remove from oven and serve immediately topped with cinnamon ice cream, pumpkin ice cream, or vanilla ice cream for a warm and comforting dessert.

Notes

  • You can adjust the amount of bourbon according to your taste preference, reducing it if you want a milder bourbon flavor.
  • Adding chopped nuts like walnuts or pecans into the filling adds a delightful crunch.
  • Honeycrisp apples are recommended for their balance of sweetness and tartness, but you can substitute with other firm baking apples.
  • Spoon the baking liquid over the apples periodically during baking to keep them moist and infused with flavor.
  • Serve immediately after baking to enjoy the best texture and temperature contrast with ice cream.
