Ingredients

Units Scale

Fresh Ingredients

  • 4 ripe tomatoes, cored and quartered
  • 1 red onion, peeled and quartered
  • 3 garlic cloves, peeled
  • 3 jalapenos, stemmed and seeded (or substitute habanero or serrano peppers)
  • 1/3 cup fresh cilantro
  • 15 ounces crushed San Marzano tomatoes (1 can)
  • 4.5 ounces diced green chiles, mild, medium, or hot

Additional Seasonings & Liquids

  • 3 tablespoons fresh lime juice
  • 23 teaspoons ground cumin
  • 23 teaspoons sugar (optional)
  • 1 1/2 teaspoons salt

Instructions

  1. Prepare the base: Place the fresh tomatoes, onion, garlic, jalapenos, cilantro, lime juice, 2 teaspoons cumin, 2 teaspoons sugar (if using), and salt in a food processor. Pulse until the mixture is finely blended but not overly pureed, maintaining some texture.
  2. Combine with canned ingredients: Pour in the crushed San Marzano tomatoes and diced green chiles. Puree the mixture until it is mostly smooth but with a bit of texture still remaining to give the salsa some body.
  3. Taste and adjust: Taste the salsa and add more cumin or sugar if desired, blending briefly to incorporate the additional seasonings.
  4. Chill and serve: Transfer to a bowl and refrigerate until ready to serve, allowing flavors to meld. Serve chilled or at room temperature.

Notes

  • Adjust the spiciness by choosing milder or hotter jalapenos or green chiles.
  • If you prefer a chunkier salsa, pulse the ingredients less or chop some ingredients by hand.
  • This salsa can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a smoky flavor, add a small spoonful of chipotle peppers in adobo sauce.
