Description

A decadent and flavorful Burrito inspired by Taco Bell’s Beefy Melt, featuring seasoned ground beef, cheesy sauce, crispy Fritos, and fresh toppings all wrapped in a warm flour tortilla for a satisfying meal.


Ingredients

Meat and Seasoning

1 pound lean ground beef
1 (1 oz) packet taco seasoning
1/4 cup water or beef broth

Beans and Rice

1 cup refried beans (optional)
2 cups cooked Mexican rice or instant Mexican rice

Wraps and Chips

4 burrito-sized flour tortillas
2 cups Fritos or Doritos

Cheese and Dips

1 cup cheese dip, warmed
1 cup shredded Mexican cheese blend

Toppings

1/2 cup sour cream
Salsa, if desired


Instructions

  1. Cook the Beef: In a sauté pan, cook the ground beef over medium heat, breaking it apart as it cooks, until no longer pink.
  2. Add Seasoning: Stir in the taco seasoning and water or beef broth, cooking for an additional minute to develop flavor.
  3. Mix in Beans: Add the refried beans to the meat mixture and stir until combined. Adjust the consistency with a little more water if it’s too thick.
  4. Prepare Rice: Warm the instant Mexican rice according to package instructions or heat leftover rice.
  5. Warm Tortillas: Microwave the tortillas on a plate for about 30 seconds until soft and pliable.
  6. Assemble Burritos: Lay a tortilla flat, place 2 tablespoons of meat mixture in the center, followed by 2 tablespoons of rice, a handful of Fritos, a spoonful of cheese dip, shredded cheese, and a spoonful of sour cream.
  7. Roll Burrito: Fold in the sides and roll from one end tightly into a burrito shape. Repeat with remaining ingredients.
  8. Optional Toast: To add crispness, heat a skillet over medium heat and toast each burrito until golden and crispy on the outside.
