Description

A flavorful and satisfying beef and vegetable rice bowl that combines seasoned ground beef, colorful peppers, and a savory soy sauce glaze, served optionally over fluffy rice for a complete meal.

Ingredients

Units Scale

Meat and Vegetables

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, diced
  • 1 pound ground beef

Sauces and Seasonings

  • 1/2 cup soy sauce (can use low sodium)
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 2 teaspoon black pepper

Optional

  • Cooked rice (for serving)

Instructions

  1. Heat Butter: In a large pan, melt the butter over medium heat until fully melted and bubbling.
  2. Sauté Vegetables: Add the diced onion, green bell pepper, red bell pepper, and jalapeno to the pan. Cook for about 5 minutes, stirring occasionally, until vegetables are tender and fragrant.
  3. Cook Ground Beef: Add the ground beef to the pan with the vegetables. Cook, breaking it apart with a spatula, until the beef is browned and fully cooked through, approximately 8-10 minutes.
  4. Drain Excess Fat: Carefully drain excess fat from the pan, then return the beef and vegetables to the stove.
  5. Add Sauces and Seasonings: Pour in the soy sauce and sprinkle garlic powder, salt, and black pepper. Mix well to ensure all ingredients are evenly coated and heated through, about 2-3 minutes.
  6. Serve: Spoon the beef and vegetable mixture over cooked rice if desired, and enjoy immediately.

Notes

  • You can add other vegetables like mushrooms or carrots for variation.
  • For a spicy kick, keep the seeds in the jalapeno or add hot sauce.
  • If using uncooked rice, cook it separately according to package instructions and serve alongside the beef mixture.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • This dish can be made ahead and reheated quickly in a microwave or stovetop.
