Description

This BBQ Lime Chicken recipe features crispy baked chicken tenders coated in panko breadcrumbs and infused with a tangy, sweet barbecue lime sauce. Perfectly seasoned and baked to golden perfection, these chicken tenders make a flavorful and satisfying main dish, great for family meals or casual gatherings. Serve with ranch dressing for an extra creamy touch.

Ingredients

Scale

For the Chicken:

  • 1 cup all-purpose flour
  • 2 lb. chicken tenders
  • 2 cups panko bread crumbs
  • 3 large eggs
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

For the BBQ Lime Sauce:

  • 1 cup barbecue sauce
  • 1/2 cup packed brown sugar
  • Juice of 2 limes
  • 1 tsp. garlic powder

Optional Serving:

  • Ranch dressing

Instructions

  1. Coat the Chicken in Flour: Preheat your oven to 425°F (220°C). Place the chicken tenders and all-purpose flour into a large resealable plastic bag and shake well until each piece of chicken is fully coated in flour. This initial coating helps the egg and breading adhere better.
  2. Set Up Dredging Station and Bread Chicken: Prepare a dredging station with two shallow bowls: one filled with panko bread crumbs, and the other with the whisked eggs mixed with 2 tablespoons of water. Dip each floured chicken tender first into the egg mixture, then coat thoroughly with breadcrumbs. Place the breaded chicken onto a prepared baking sheet, and season generously with kosher salt and freshly ground black pepper.
  3. Bake the Chicken: Bake the coated chicken tenders in the preheated oven for 20 to 25 minutes, or until they turn golden brown and crispy on the outside and reach an internal temperature of 165°F (74°C).
  4. Prepare the BBQ Lime Sauce: While the chicken bakes, combine barbecue sauce, brown sugar, lime juice, and garlic powder in a small saucepan. Heat over low heat and whisk continuously. Allow the sauce to simmer gently for about 5 minutes until the sugar dissolves and flavors blend well.
  5. Toss Chicken in Sauce and Serve: Once baked, transfer the chicken tenders to a large bowl and toss thoroughly with the warm BBQ lime sauce until all pieces are well coated. Serve immediately, optionally accompanied by ranch dressing for dipping.

Notes

  • You can use chicken breasts cut into strips instead of tenders if desired.
  • For extra crispiness, lightly spray the breaded chicken with cooking spray before baking.
  • The BBQ lime sauce can be adjusted in sweetness or tartness by varying the amount of brown sugar or lime juice.
  • To make this dish gluten-free, substitute all-purpose flour and panko breadcrumbs with gluten-free alternatives.
