Description

This BBQ Chicken Salad is a delicious and satisfying dish that combines tender chicken, crisp veggies, creamy dressing, and tangy BBQ sauce for a flavor-packed meal.


Ingredients

For The BBQ Chicken Salad

  • 1.5 cups chopped or shredded cooked chicken
  • 1/4 cup BBQ sauce plus more for the dressing
  • 68 cups of sliced fresh romaine lettuce
  • 1 cup cooked black beans – I used store-bought canned black beans that I drained and rinsed
  • 1 cup canned, cooked corn
  • 1 cup sliced cherry tomatoes
  • 1 ripe avocado, peeled, seed removed and diced
  • 1/2 cup diced red onion
  • 1/4 cup chopped scallions
  • 1/4 cup chopped cashews

For the Creamy BBQ Dressing

  • 1/4 cup mayo
  • 1/4 cup bbq sauce – I used Kevin’s Paleo BBQ Sauce
  • 1 teaspoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Add the cooked chicken to a bowl and pour the BBQ sauce over it and toss to coat the chicken. Arrange the sliced lettuce on the bottom of a large bowl and then add the rest of the salad ingredients on top along with the BBQ chicken.
  2. Mix up the dressing by combining all of the dressing ingredients in a bowl and mixing until creamy. Pour the dressing over the salad and lightly toss.
  3. Serve cold and enjoy!
