Instructions
- Preheat Oven and Prepare Pans: Preheat your oven to 350°F. Lightly spray two mini muffin pans with non-stick cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
- Incorporate Butter: Cut the cold butter into the flour mixture using a pastry blender or two knives until the mixture resembles coarse crumbs.
- Combine Wet Ingredients: In a separate small bowl, whisk together the egg, vanilla extract, and vanilla yogurt until smooth.
- Form Batter: Add the wet ingredient mixture to the dry ingredients and stir until fully combined. Gently fold in the chopped and shredded apples to distribute evenly.
- Fill Muffin Cups and Bake: Spoon a few teaspoons of batter into each prepared mini muffin cup. Bake in the preheated oven for 15 minutes or until fritters start to brown around the edges.
- Prepare to Broil: Remove the pans from the oven and switch the oven setting to broil at high. Line two cookie sheets with parchment paper and transfer the baked fritters onto them.
- Make Thin Glaze and Glaze Fritters: In a small bowl, whisk 1 cup powdered sugar with 4 tablespoons apple cider until very thin. Brush this glaze generously over each fritter, allowing it to drip down the sides.
