Instructions

  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F. Lightly spray two mini muffin pans with non-stick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  3. Incorporate Butter: Cut the cold butter into the flour mixture using a pastry blender or two knives until the mixture resembles coarse crumbs.
  4. Combine Wet Ingredients: In a separate small bowl, whisk together the egg, vanilla extract, and vanilla yogurt until smooth.
  5. Form Batter: Add the wet ingredient mixture to the dry ingredients and stir until fully combined. Gently fold in the chopped and shredded apples to distribute evenly.
  6. Fill Muffin Cups and Bake: Spoon a few teaspoons of batter into each prepared mini muffin cup. Bake in the preheated oven for 15 minutes or until fritters start to brown around the edges.
