- 1 small jalapeno, seeded if preferred less heat, chopped
- 2 Tbsp. freshly chopped cilantro
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the guacamole: In a large bowl, combine the mashed avocados, softened cream cheese, lime juice, minced garlic, red onion, jalapeno, chopped cilantro, cumin, and chili powder. Stir the mixture until it is mostly smooth, allowing some chunks for texture. Season with kosher salt and freshly ground black pepper to taste. Cover and place the bowl in the refrigerator for 30 minutes to let the mixture firm up slightly.
- Form and coat the guac bombs: Spread the crumbled bacon evenly on a large plate. Using a small cookie scoop or spoon, scoop out portions of the chilled guacamole mixture. Roll each portion in the crumbled bacon, pressing gently so the bacon adheres well to the outside. Repeat this process until all the guacamole and bacon are used.
- Chill and serve: Store the finished bacon guac bombs in the refrigerator until ready to serve. This helps maintain their shape and enhances the flavors. Serve chilled as a party appetizer or snack.
