Blondies:
- 3/4 cup unsalted butter, melted (can still be a little warm, but not hot)
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 3/4 cups + 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cornstarch
- 1 teaspoon salt
- 1 cup butterscotch chips
Instructions
- Preheat Oven: Preheat the oven to 350 degrees.
- Prepare Pan: Line an 8×8 or 9×9 pan with parchment paper for easy removal and spray with non-stick cooking spray.
- Mix Butter and Sugar: In a large bowl, whisk together the melted butter and brown sugar until well combined.
- Add Eggs and Vanilla: Mix in the eggs one at a time until combined, then add vanilla and mix.
- Add Dry Ingredients: Incorporate the flour, cornstarch, baking powder, and salt, whisking until combined.

- Transfer to Pan: Pour the blondie batter into the prepared pan and spread it out evenly using the back of a spoon.
