Description

This Autumn Kielbasa Sheet Pan Bake is a vibrant and hearty one-pan meal featuring tender roasted sweet potatoes, Brussels sprouts, and juicy red grapes, all tossed with flavorful cooked kielbasa sausage. Finished with a creamy curry Dijon sauce and fresh scallions, this dish offers a perfect balance of sweet, savory, and tangy flavors ideal for a cozy fall dinner.

Ingredients

Scale

Vegetables and Sausage

  • 1 large sweet potato, cut into 3/4″ cubes (about 3 cups)
  • 10 oz. small Brussels sprouts, halved (about 3 cups)
  • 8 oz. seedless red grapes
  • 1 (14-oz.) cooked kielbasa sausage, cut into rounds

Seasonings and Oil

  • 2 Tbsp. apple cider vinegar
  • 2 Tbsp. extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper

Creamy Curry Dijon Sauce

  • 1/2 cup sour cream
  • 1 Tbsp. lukewarm water
  • 2 tsp. Dijon mustard
  • 1 1/2 tsp. curry powder
  • 2 scallions, sliced

Instructions

  1. Preheat and Prepare Vegetables: Preheat your oven to 425ºF. On a large rimmed baking sheet, combine the cubed sweet potato, halved Brussels sprouts, red grapes, apple cider vinegar, olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Toss well to coat the vegetables evenly.
  2. Add Kielbasa and Arrange: Add the sliced kielbasa rounds to the vegetable mixture and toss gently to distribute everything evenly across the baking sheet. Spread the ingredients in an even layer for uniform roasting.
  3. Roast the Mixture: Place the baking sheet in the preheated oven and roast for about 25 minutes, tossing halfway through cooking. Roast until the vegetables are tender, the sweet potatoes are fork-tender, and the Brussels sprouts have softened nicely.
  4. Prepare the Sauce: While the roasting finishes, in a small bowl, combine the sour cream, lukewarm water, Dijon mustard, and curry powder. Stir the sauce well and season with kosher salt to taste.
  5. Serve with Sauce and Garnish: Once the roasting is complete, drizzle the entire sheet pan bake with the creamy curry Dijon sauce. Sprinkle the sliced scallions over the top for a fresh, bright finish. Serve immediately and enjoy.

Notes

  • You can substitute smoked sausage or chorizo for kielbasa if desired.
  • Adjust curry powder quantity according to your spice preference.
  • Leftovers keep well refrigerated for up to 3 days; reheat in the oven or microwave.
  • For a dairy-free version, substitute sour cream with a vegan alternative.
