Description

This Apple Spice Cake is a moist and flavorful dessert featuring whole wheat and all-purpose flours, infused with warm cinnamon and sweet brown sugar. Topped with tender caramelized apple slices and a luscious homemade whipped cream, it’s perfect for a cozy fall treat or any celebration.

Ingredients

Scale

Cake

  • 1/2 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/3 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Caramelized Apples

  • 2 tablespoons margarine or butter
  • 1/4 teaspoon cinnamon
  • 1 tablespoon brown sugar
  • 1 large apple, peeled and sliced (preferably Granny Smith)

Whipped Cream

  • 1/2 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease an 8-inch round cake pan to prevent sticking, preparing it for the batter.
  2. Mix the Cake Batter: In a large bowl, whisk together canola oil, unsweetened applesauce, brown sugar, egg, and vanilla extract until smooth and well combined. In a separate bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, stirring until just combined to keep the batter light.
  3. Bake the Cake: Pour the batter into the prepared cake pan, smoothing the top. Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted near the center comes out clean. Once baked, remove from oven and allow to cool completely.
  4. Prepare Caramelized Apples: In a medium skillet, melt butter over medium heat. Stir in cinnamon and brown sugar until combined. Add the peeled and sliced apples, cooking gently and stirring occasionally until apples are tender but retain their shape, about 5-7 minutes. Remove from heat and let cool to room temperature.
  5. Make Whipped Cream: Using an electric mixer, beat the whipping cream until soft peaks form. Add powdered sugar and vanilla extract, then continue beating until stiff peaks form, creating a light and airy whipped cream.
  6. Assemble the Cake: Place the cooled cake on a serving plate. Spread or dollop the whipped cream evenly over the top, then arrange the caramelized apples decoratively on the whipped cream. Serve immediately or chill briefly before serving.

Notes

  • Use firm apples like Granny Smith for better texture in caramelized apples.
  • Make sure the cake and apples are completely cooled before assembling to prevent the whipped cream from melting.
  • If desired, substitute margarine with butter for a richer flavor.
  • The cake pan should be well greased to ensure easy removal of the cake.
  • Adjust the sweetness of the whipped cream by modifying the amount of powdered sugar according to taste.
