  • 1/2 cup apple cider
  • 1 tablespoon salted butter
  • 6 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract


Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350 degrees Fahrenheit. Grease and line a 9×5 loaf pan with parchment paper, also greasing the parchment for easy release.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together 3 cups all-purpose flour, 1 cup granulated sugar, 1 cup light brown sugar, 2 teaspoons ground cinnamon, 3/4 teaspoon ground nutmeg, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 1/2 teaspoon salt until well combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk 4 large eggs, 1 cup oil, and 2 teaspoons vanilla extract until smooth. Pour the wet mixture into the dry ingredients and stir until just combined. The batter will be very thick.
  4. Add Apples: Gently fold the chopped and peeled apples into the batter evenly, then transfer the batter to the prepared loaf pan and spread it out evenly.
  5. Bake the Bread: Bake the bread for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 10 minutes, then remove it and transfer to a wire rack to cool completely.
  6. Prepare Apple Cider Glaze: While the bread cools, bring 1/2 cup apple cider to a boil in a small saucepan over high heat. Reduce heat and simmer until the cider has reduced by half.
  7. Finish Glaze and Drizzle: Remove the reduced cider from heat and whisk in 1 tablespoon salted butter, 6 tablespoons powdered sugar, and 1/4 teaspoon vanilla extract until smooth. Drizzle the warm glaze evenly over the cooled apple bread.
