Ingredients
Scale
For the streusel
- 1/4 cup (50g) brown sugar
- 1/4 cup (50g) granulated sugar
- 1/4 cup (30g) all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
For the apple bread
- 1 1/2 cups (180g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup plain, unsweetened Greek yogurt
- 1/3 cup whole milk
- 1 large Granny Smith, Honeycrisp, or Golden Delicious apple, peeled and diced
Instructions
- Preheat the oven and prepare loaf pan: Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with a single sling of parchment paper, leaving about a 1-inch overhang on the long sides to allow easy removal of the bread after baking.
- Make the streusel topping: In a medium bowl, combine the brown sugar, granulated sugar, flour, cinnamon, and salt. Slowly drizzle the melted butter over the dry ingredients while tossing with a fork. Mix until the mixture is crumbly and doughy. Set aside.
- Mix the dry ingredients: In another medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- Combine the wet ingredients: Using a hand mixer or stand mixer fitted with a beater attachment, beat the softened butter and granulated sugar on medium speed for about 2 minutes until the mixture is light and fluffy. Add the egg and vanilla extract, continuing to mix on medium speed until fully combined. Then add the Greek yogurt and whole milk and mix until smooth and creamy.
- Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients. Beat on low speed at first, then increase to medium speed, mixing for 1-2 minutes until a smooth, lump-free batter forms.
- Fold apples into batter: Gently fold the peeled and diced apples into the batter using a rubber spatula, ensuring they are evenly distributed.
- Pour batter into loaf pan: Transfer the batter into the prepared loaf pan and evenly sprinkle the streusel topping over the surface.
- Bake: Bake in the preheated oven for 45-50 minutes, or until the streusel topping is golden brown and a toothpick inserted into the center of the loaf comes out clean.
- Cool: Allow the bread to cool in the pan for 10-15 minutes. Then use the parchment paper sling to lift the bread out of the pan and transfer it to a wire rack. Cool an additional 5-10 minutes before slicing and serving.
Notes
- The choice of apple variety affects the flavor: Granny Smith provides tartness, Honeycrisp offers sweetness and crunch, and Golden Delicious delivers a mild, balanced taste.
- Room temperature ingredients ensure a smoother batter and better rise.
- For extra moisture, do not overbake; start checking doneness at 45 minutes.
- The streusel topping adds a sweet crunch contrast to the soft bread.
- You can substitute plain yogurt if Greek yogurt is not available, but Greek yogurt adds creaminess and tang.
- Ensure to grease and properly line the loaf pan for easy removal.
